Here's a simple recipe for Crispy Pesto Chicken with Whipped Feta & Tomatoes:

Ingredients

  • 4 boneless, skinless chicken breasts

  • Salt and pepper, to taste

  • 1/2 cup basil pesto

  • 1 cup cherry tomatoes, halved

  • 4 oz feta cheese, crumbled

  • 2 tbsp olive oil

Instructions:

  • Preheat your oven to 400°F (200°C).

  • Season the chicken breasts with salt and pepper.

  • Heat olive oil in a large oven-safe skillet over medium-high heat.

  • Add the chicken breasts and cook for 3-4 minutes per side, or until golden brown.

  • Remove the skillet from the heat and spread pesto evenly over each chicken breast.

  • Scatter the halved cherry tomatoes around the chicken.

  • Crumble the feta cheese over the tomatoes.
